Child Nutrition and Cooking

One of my goals for this year was to get the entire family to be healthier. In order to accomplish this I wanted to start cooking healthier foods as well as incorporating exercising into our daily routine. My husband told me about a child nutrition and cooking class that was being held online on Coursera. If you don't know what Coursera is it's an education company that partners with the top universities and organizations in the world to offer courses online for anyone to take, for free. The Child Nutrition and Cooking 2.0 class teaches the basics of child nutrition and how to make healthy meals for healthy children and families.

I signed up and I have completed 4 of the 5 week course. I am really impressed with how much information I learned and how simply it was presented. I was shocked to learn that one in three children in the USA are overweight or obese. I also didn't realize how bad processed food really is. In fact most of the sugar from our diet comes from processed foods! The class also has multiple simple recipes each week that you can try at home to help you get started eating healthier. My family loved the egg in the hole and the healthier version of a cupcake.

So far we have been doing much better eating healthier. I have a noticed a positive change in my daughter's temper tantrums and in her health. In fact I was just telling my husband that this has been her healthiest winter ever. We are all still working hard to stay on track, we have had some bad days due to my sons teething, but overall we are doing really well. Now we just need to incorporate more exercising into our daily routine.
