Tofu Mushroom Noodles

I have been trying to find more vegetarian meals to cook at home lately. I aim to cook one meatless meal a week which is no easy task since my husband loves beef. I tried to make something Asian inspired this week, his favorite. I came up with tofu mushroom noodles since all of the ingredients are families favorites. At the last minute I decided to add an egg on top and it came out delicious.

Tofu Mushroom Noodles
1 package tofu drained and cut in cubes
1 package sliced mushrooms
1 package of noodles (I used egg noodles)
1 tsp salt
1/2 tsp pepper
1/4 cup soy sauce
1 tbsp olive oil
1/2 tbsp minced garlic
1 fried egg (optional)
furikake seasoning (optional)

1. Cook the noodles according to the manufacturers directions.
2. Place skillet or wok over medium high heat and add olive oil.
3. Once the oil is hot add the garlic and cook for 1 minute. Add the mushroom and tofu. Season with salt and pepper and cook until the tofu is browned and the mushrooms are cooked, about 8 minutes.
4. Add the noodles and cook for 1 minute.
5. Add the soy sauce, mix well, and cook for another 5 minutes.
Once you have plated your noodles you can add a fried egg on top and sprinkle some furikake seasoning over it.
