Quck and Easy Chicken with Mushroom

Like most moms I am always trying to find something new to make for diner. Quick, easy, and healthy are my main requirements. Since we love mushrooms at my house I decide to make chicken with mushrooms. This was just something I came up with on the fly and it turned out really yummy so I am sharing it with you. I served it with a side of rice but I think it would work really well with pasta too.

Chicken with Mushrooms
1 lb boneless and skinless chicken cut into small cubes
1 package of sliced mushrooms
1 can of chicken broth
1/4 cup heavy cream
1/4 tsp salt
1/4 tsp pepper
1 tbsp cajun seasoning
1/2 tsp olive oil

1. Place the olive oil in a pan and heat using medium high heat. Once hot place the chicken in the pan. Season with salt, pepper, and cajun seasoning and cook until lightly browned.
2. Add the mushrooms and cook for an additional two minutes.
3. Add the chicken broth and heavy cream and stir until well mixed. Once the liquid is boiling cover the pan and continue cooking until the liquid has reduced by half.
4. Let cool before serving.
