Entertaining: Sunday Brunch

My family gets together for dinner on Sundays. It's usually pot luck style and recently we added themes for our dishes. We have done Hawaiian Lua, Alice in Wonderland tea party, and most recently Sunday Brunch. Now breakfast is my favorite meal of the day, I love breakfast food so I was all over this theme. I couldn't decided what dish to make so I ended up bringing three dishes and making my own ricotta. So without further ado my brunch.




Chicken and mushroom frittata, recipe here. I used cooked ground chicken, mushrooms, and green onion because thats what was in my fridge. It came out super yummy and was really quick to make. Great recipe for when you have unexpected guests over and need to make brunch in a pinch.





Next on the menu was breakfast toast, recipe here, I used raspberries and nectarines for this. I had bought peaches but I mistakenly cut the nectarines that where in my fridge so I went with it. I liked the contrast of sweet with a little tang.




I made my own ricotta for the toast, recipe here, and it was delicious and fresh. It seriously only took me fifteen minutes to make. Just make sure you use a large enough saucepan so your milk doesn't boil over onto your stove causing a huge mess. Yeah my stove is still a mess.




And the last dish I made was Belgian waffles, recipe here. These were the best waffles I have ever had in my whole life. Everyone raved about them and they were quickly devoured. Note the recipe gets all fancy with the mixing but I don't have time for that. I mixed all the dry ingredients first and then I threw in all the wet ingredients and mixed until combined. Presto!
