Strawberry Fruit Rollups

When I was growing up we never really were allowed to eat very much junk food. My mom never bought it so it was always a special treat to have fruit rollups and chips at parties and such. Now that I have my own daughter I am very picky about what she eats and the last thing I would buy for her is a fruit rollup. She has only had it once and it was at a party. She LOVED it and scarfed it down right away! I found this healthy fruit rollup recipe over on Pinterest and decided to give it a try.




First off let me start by saying this was a very good recipe but it lacked sweetness so my daughter tried it and didn't ask for seconds. I decided to make some changes to the recipe and my daughter liked the second batch better. It was a very easy recipe to make and I am going to try using blueberries next time as well.


Strawberry Fruit Roll Ups
Adapted from The Copycat Cook
2 cups strawberries
¼ tsp cinnamon
1 tablespoon honey

1. Blend the fruit, cinnamon, and honey until smooth, then spread onto a Teflex sheet or a parchment-lined baking sheet.
2. Bake at 175 degrees for 2 hours.
3. Cut into strips and store in a glass container in the refrigerator.

Some tips, make sure you spread the mixture out evenly on the pan. The thinner you spread out the mixture the sooner it will be ready. It's ready when it looks very dry and you can see the seeds.
