Sweet Potato Pie

I love sweet potato, especially sweet potato pie! I found some canned sweet potato on clearance at Target and I bought a can. I wasn't sure what I was going to use it for but this weekend I got a craving for sweet potato pie so I decided to make some. The pie came out great and it wasn't too sweet, which I was afraid of. Now I just have to stop myself from eating the whole pie!




Sweet Potato Pie (Serves 6 - 8)
1 15oz can sweet potato puree
3/4 cup sugar
1/2 tsp pumpkin pie spice
1 tsp vanilla
1 cup evaporated milk
2 eggs slightly beaten
1 9 inch pie shell

1. Mix all of the ingredients together, except the pie shell.
2. Pour the mixture into your pie shell.
3. Bake at 425 degrees for 15 minutes.
4. Reduce temperature to 350 degrees and continue to bake for 30 - 40 minutes.
5. Cool pie before serving.
