Black Bean, Corn & Meatball Chili

I came across this yummy recipe, from Stock Piling Moms, for black bean, corn, and chicken chili. I had most of the ingredients on hand so I decided to make it. I made a couple of changes to it based on what I had in my pantry. Just a warning this recipe is a bit on the spicy side. If you want to make it mild omit the jalapeno's.

 Black Bean, Corn & Meatball Chili
Adapted from Stock Piling Moms

1 pound ground chicken
1/4 cup bread crumbs
1 teaspoon salt
1/2 teaspoon pepper
2 teaspoons cumin
2 teaspoons chili powder
1 can chicken broth
1 can black beans
1 can diced tomatoes
1 jalapeno sliced or 1 small can of diced jalapeno
1 (6 oz.) can tomato paste
1 can corn
1 tablespoon garlic (minced)

1. Mix the chicken, salt, pepper, and breadcrumbs together. Once well mixed form balls from the chicken mixture.
2. Add all ingredients to a slow cooker.
3. Cover, heat, and simmer for approximately 6 to 8 hours.
