DIY NutriGrain Bars

I decided to make my own NutriGrain bars because my daughter loves to eat them, they are expensive at the store, and the ingredients aren't exactly healthy. I found a recipe from The Lean Green Bean that I decided to try out. I made some changes to it and learned some things but overall they were very yummy. I think next time they will be PERFECT.





Joanna Does It All Homemade Nutrigrain Bars (Modified from The Lean Green Bean)
1 1/4 c whole wheat flour
1 c oats
1 small container honey vanilla Greek yogurt
1 egg
1/4 c brown sugar
1 tsp vanilla
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp cinnamon
fruit filling or jam of your choice

Directions:
1) Mix the yogurt and brown sugar on medium for 1 minute.
2) Add the egg and vanilla and mix for another minute.
3) Mix in the flour, oats, baking powder, baking soda and cinnamon.
4) Roll the dough into a rough rectangle. The dough is very sticky so make sure to use ample flour when rolling out. Cut into squares that are approximately 4 inches by 2 inches.
5) Spoon some fruit filling or jam onto the square, fold dough in half and press seams to close. Make sure your filling is thick in consistency. I used a thin jam and it mostly got absorbed into the bread.
6) Bake at 350 degrees for 20 minutes. Make sure to check on them after 10 minutes. Mine burned, should have taken them out after 12 minutes.

These bars will keep in the refrigerator for one week. Just warm them up right before you eat them. I made about fourteen bars so I only baked seven of them and placed the other seven in the freezer. I am going to bake them next week and fingers crossed they turn out tasty. I will let you know.
