Apple Almond Bread Pudding

I recently came across The Lean Green Bean, and immediately thought God really wants me to start eating healthy! I decided to try the Pear & Chocolate Bread Pudding because it sounded delicious and easy to make. I decided to make it using apples, it's what I had on hand, and almonds instead of chocolate chips. Be warned your kitchen will smell heavenly while it is baking! I brought this to our family New Years BBQ party and it was so good people went back for seconds and thirds.

Apple Almond Bread Pudding
Adapted from Pear and Chocolate Bread Pudding by Megan Pence

1 loaf, French Bread
1 quart milk, I used 2%
1 Tbsp. Vanilla
3 eggs
1/2 tsp Cinnamon
1/4 tsp All Spice
1 cup Sugar
1/2 cup ground almonds
3 Gala Apples

1. Preheat the oven to 350. Slice bread into ½ inch slices. Set aside. Peel and core three Gala apples. Slice thinly, into ¼” inch slices. Set aside.
2. Grease 13x9 inch baking dish. In pan, alternate one row of sliced bread with one row of sliced apples. Sprinkle some ground almond on the apples. Repeat this process until all of the bread, apples, and almond are used. Overlap bread slices to ensure there are no gaps in pan.
3. In a large bowl, whisk together quart of milk, eggs, vanilla, cinnamon, all spice, and sugar. Pour entire mixture over the top of layered bread and apples.
4. Bake for 45 minutes, or until center of pudding is set. Slice and serve warm.

  1. Oh to have been in your kitchen while this baked. I'd definitely enjoy a taste. I have a sweet treat linky party going on at my blog till Monday night and I'd love it if you'd come by and link your pudding up.
