Pumpkin Empanadas

Since Thanksgiving season is here the stores are finally stocking up on pumpkin puree so I decided to make some empanadas. My daughter loves finger foods so I thought making her some would be a good way to get her to eat pumpkin. I came across this recipe for pumpkin empanadas so I decided to give the recipe a try. Since I am always short on time I used already made pie crusts instead of making the dough from scratch.

The empanadas were delicious and they smell heavenly. I used 3/4 cup brown sugar since I thought 1 cup would make it too sweet, I think I was right. I also didn't use any cloves because I didn't have any on hand. Since I had some dough scraps left over I got creative and made some bite size ones. I forgot that I had something in the oven until I smelled something burning, oops. They were a little crispier than I had planned but still edible. The next day I gave my daughter one to try and she had two bites and refused to eat anymore, typical.
