Cakes to die for!

I went to my local library to find a new cake recipe book and I came across Cakes to die for! by Bev Shaffer. I flipped through it and I found a couple of recipes I wanted to try, Marble Cake and Hazelnut Cream Cupcakes, so I checked it out. When I went to the back of the book I found a recipe for white cake that had all of the ingredients that a yellow cake usually has so I decided to try it out.


The recipe was not only delicious but simple to make. It tasted just like yellow cake to me so I decided to use the recipe to make my daughters birthday cake/cupcakes. I hope you get a chance to try it.

My Mixes White Cake from Cakes to die for! by Bev Shaffer
3 cups unbleached all-purpose flour
1 tbsp. baking powder
1/4 tsp. salt
1 cup unsalted butter, room temp, cut into small pieces
2 cups granulated sugar
6 large eggs
1 tsp. vanilla extract
1 cup milk, whole

Directions
1. Heat oven to 350 degrees. Grease 2 9" round pans.
2. In a medium bowl, whisk together flour, baking powder, and salt.
3. In a large bowl beat the butter and sugar until light and fluffy. Scrape bowl.
4. Add the eggs, one at a time, mixing well after each addition. Beat in the vanilla to combine.
5. With mixer on low add the milk alternately with the four mixture. Beat until smooth. Scrape batter into prepared pans.
6. Bake for 28 to 34 minutes or until toothpick comes out clean.
7. Cool in pan for 10 minutes. Remove from pan. Allow to cool completely on wire racks.
